The Bruer's slow, drip-by-drip process is designed to avoid over-extraction entirely — a common problem with full-immersion cold brew methods — while drawing out the natural sweetness and full-bodied flavour of whatever coffee you use. It's a genuinely satisfying thing to watch too: water drips slowly through the coffee grounds and into the collection carafe across three visible chambers, built from borosilicate glass, stainless steel and food-grade silicone.
